Nutrition scientist Dr Emily Prpa, known on social media as The Nutrition Reporter, has shared a recipe for chocolate brownie baked oats with a peanut butter swirl, a make-ahead breakfast that promises to make mornings easier and more exciting.
In a recent Instagram post, Dr Prpa described the dish as a “breakfast you’ll actually want to jump out of bed for,” highlighting its balance of taste and health. The recipe is designed to be high in protein and fibre, while also including gut-friendly ingredients that support digestion and sustained energy.
The baked oats combine rolled oats with cacao powder, ground flaxseeds, baking powder, and a pinch of salt, with chia seeds added optionally for extra fibre. The wet ingredients include mashed ripe bananas, eggs or flax eggs, milk of choice, maple syrup or honey for natural sweetness, and vanilla extract. What makes the dish especially indulgent is the peanut butter swirl, created by mixing peanut butter with a little sweetener and water to achieve a smooth, drizzle-friendly texture.
