A healthier version of the classic Indian winter dessert gajar ka halwa is winning hearts online after a fitness influencer shared a high-protein, low-calorie recipe that promises indulgence without guilt. The recipe, shared by fitness content creator Vanshika Khurana on Instagram, claims to deliver 12 grams of protein in just 190 calories per serving, and with no added sugar.
Gajar ka halwa, a traditional North Indian sweet made from carrots, milk, ghee and sugar, is a seasonal favourite during winter. Carrots are a cool-season crop and are naturally rich in nutrients such as vitamin A, fibre, potassium and antioxidants. However, the conventional preparation, often heavy on sugar and ghee, is not considered diet-friendly.
Vanshika’s version aims to change that narrative. Instead of sugar, she uses a zero-calorie sweetener, along with low-fat milk and paneer to boost protein content. The recipe includes grated red carrots, minimal ghee, nuts in moderation, and aromatic cardamom for flavour. According to her, the dish is nutritious enough to be eaten even for breakfast, thanks to its balanced macros and protein load.
The preparation involves pressure-cooking sautéed carrots in milk, mashing them, and then slow-cooking the mixture with paneer, sweetener and nuts to achieve the traditional halwa texture. Optional saffron or food colour can be added for visual appeal.
The post quickly gained traction among fitness enthusiasts and home cooks looking for healthier festive alternatives. Many users appreciated the idea of retaining the essence of a beloved dessert while adapting it to modern dietary goals.
However, Hindustan Times notes that the recipe and its nutritional claims are based on user-generated social media content and have not been independently verified. As with any diet trend, experts advise moderation and personal nutritional assessment.
Still, Vanshika’s protein-rich gajar ka halwa proves that traditional flavours and healthy eating don’t always have to be at odds.
